Recipe Summer Vegetable Frittata










What u need is a countertop pizza maker see HERE
veggies were all sliced thin unless otherwise stated
I used 1/2 small red onion
1 stalk celery
6 mini sweet peppers
2 yellow squash
1/2 pkg baby portabello mushrooms chopped
hand full cherry tomatoes cut in half

*saute the above in olive oil in a frying pan of your choosing to desired tenderness
(I did not brown the veggies)
*place your veggies in the preheated pizza maker
*pour in your eggs 12 eggs beaten with black pepper and red pepper flakes added to taste
*top with your 1 large sliced tomato close lid and cook till the eggs set add cheese close lid and cook to desired doneness - *NOTE watch your steam levels good indication that as it decreases it it close to being done
Sprinkle with parsley to garnish

12 eggs beaten 
I large tomato
3 slices 2% thin sliced swiss cheese cut in half triangle style
Italian parsley

  4. Mine is amazing I am using for more and more things and it cleans up easy just warm it up and wipe it down with a damp paper towel.
    I put your button on the side of my blog inviting others to meatless monday did u notice it?

  9. I love frittatas and make them quite often, but usually in a frying pan with a lid. Gosh, I never knew about a counter top pizza pan. What a neat thing!
